My best girl was coming over Saturday to come start planing our girls trip next year (will be talking out that soon once we have everything in stone) I wanted to make something extra to go with our coffees. She was hinting for a glass of wine buuuut I thought we keep clear minds when planing our trip and thought why not have something to get her warmed up from the shitty Melbourne weather. Seriously its been crap lately freezing cold, wet and windy. Im ready for summer! Anyhoo so I decided to make up some small brownies to have on the side with our coffees, similar to the ones I purchased at Costco earlier this year. Around May-ish I bought these bite sized brownies and they were a perfect size to have with a coffee or a cup of tea in the afternoon.
So small Baileys brownies were the go and to top things off with my recent trip to Costco, I picked up a Ghirardelli Brownie mix that was begging to be made. I actually prefer to make brownies in smaller moulds rather than a big pan only because one they are easier to pull out to eat and two the portions are manageable so I can freeze some of the brownies for later rather than have to try slam a whole pan of brownies in a few days while its still good. This is and easy recipe to follow just basically follow whats on the brownie mix box all you have to do is replace the water with Baileys Irish cream. Ive included some details for small and large brownies as well.
INGREDIENTS
1 Pouch Ghirardelli Tripple Chocolate Brownie Mix
75ml Vegetable Oil
75ml Baileys Irish Cream
1 Egg
LETS DO THIS SHIT!
- Pre-heat oven to 160°C. Prepare the baking pan by spraying it with a non-stick cooking spray. I used a silicone mini cupcakes pan it holds 12 mini cupcakes – obviously I’ll be making a few batches so I sprayed between batches.
- Put Brownie mix, oil, egg and Baileys in a bowl and stir until fully mixed. Once all mixed place mature into pan or in my case the cupcake moulds.
- Put in oven and bake (well derrrr) for a pan bake for 45-50 minutes. For my mini brownies I baked them for only 20 Minutes.
- Once baked let brownies cool in pan before cutting or in my case removing them from the cupcake moulds.

We managed to plan our girls trip (soo excited!!!!) and these cute little brownies were a hit, after we both slammed a heap down we realised it probably wasn’t such a good idea when we are planing a trip. Especially if were planing on rocking showing a lot of skin. These were super easy to make and I had no dramas.
